Faux rice
Here's an interesting idea from our e-mailbag, courtesy of frequent correspondent Helen S.:
Ari, I have been wanting a way to have the white rice I miss so much with certain meals, so experimented with the Penne. I had a large amount left over and was tired of penne, so took a box of it and put in my food processor and ground it for 3-5 minutes until it was about like rice grains, with a little starchy powder in it.
I boiled it the same way, and it is delicious. This batch is 4 oz. with 1 tsp each real butter and olive oil, and a grated garlic to go with salmon – 2 servings.
