Colorful Pasta

Also tastes great with grilled chicken added

Ingredients

  • 1 red pepper
  • 1 yellow pepper
  • 1 orange pepper
  • 1 cup cherry or grape tomatoes halved
  • 2 tbsp olive oil
  • fresh garlic to taste
  • 1 small onion
  • 2 scallions chopped
  • 2 tbsp shredded parmesan
  • 4 oz Fiber Gourmet Rotini Pasta

Instructions

  1. Chop peppers and onion into bite-size pieces
  2. Slowly heat olive oil and garlic, then add peppers and onions, heat to desired texture (4-8 mins)
  3. Add tomatoes for the last 2 minutes of cooking
  4. Boil & drain pasta as directed.
  5. Add veggies to the pasta, stir
  6. Add Scallions & shredded parmesan
