CORNY TEX-MEX

makes 8-10 servings--depending how hungry you are

Ingredients

  • 1 box rotini cook 4 minutes under directions
  • 1 lb ground beef
  • 1 16oz jar of mild-to med salsa
  • 1 can tomato sauce
  • 1 box of frozen corn, or 2 ears raw corn

Instructions

  1. in a skillet brown meat till thoroughly cooked, drain
  2. using a knife take off corn kernals from cob
  3. stir in salsa, tomato sauce, corn and pasta, simmer about 10-15 minutes and serve
  4. optional: grate cheddar cheese and use as a topping.
