Garden Pasta Salad

Flavors are more enhanced the longer it sits in the fridge.
Serves 5 - 5 Weightwatchers Points
- 1 box Rotini or Penne - cooked and cooled
- 1 red pepper
- 1 yellow pepper
- 1 red onion
- 1 1/2 cup green beans
- 2 ears corn on cob - cooked and scraped (or use can of corn drained) 1 1/2 cups asparagus Sundried Tomatoes (optional) Light Italian Dressing Olive Oil Parmesan Cheese
- Chop peppers, onions, asparagus and roast in 450 degree oven with a little olive oil for about 20 minutes. Par boil green beans just until tender
- Add corn, green beans, peppers, onions, asparagus (add the drippings too) to pasta. Chop up sundried tomatoes and add to salad. Add 1/3 - 1/2 cup Light Italian Dressing (or dressing of choice). Chill. Serve with grated parmesan.
