Mac 'n Cheese Las'egplant'agna

should make about 4 portions

Even my husband asked me to make this one again!


  • Fiber Gourmet mac 'n cheese prepared as on package
  • small can tomato sauce
  • package of Dominex Eggplant cutlets
  • 4 frozen turkey meatballs, sliced thin
  • freshly grated romano cheese, to garnish when serving


  1. preheat oven to 400 F
  2. in a small casserole dish, cover bottom with tomato sauce layer
  3. layer 1/2 of the eggplant slices
  4. spoon prepared Mac 'n Cheese on top of eggplant slices top with layer of remaining eggplant slices top with layer of tomato sauce
  5. bake covered for about 20 minutes
  6. bake another 10-15 minutes uncovered or until cooked throughout
  7. top with grated cheese to serve
