Pasta w/ Green Veggies

Makes 2 servings - each serving contains 250 total calories, 23 Grams Fiber from pasta and veggies

Ingredients

  • 4 oz. dry Fiber Gourmet Spaghetti - cooked 15 minutes in salted water - drained
  • 1/4 green bell pepper
  • 1/2 small onion slices
  • 1/2 cup fresh green beans
  • 1 cup fresh asparagus - cut in pieces
  • 1 cup snow peas or sugar snap beans
  • 1 garlic clove - grated
  • 1/2 cup pasta water
  • salt and black pepper
  • hot pepper flakes optional
  • 1/2 tsp Italian herbs

Instructions

  1. Boil pasta and toss with 1 tsp extra virgin olive oil and set aside.
  2. Place 2 tsp of olive oil in a hot non stick pan
  3. Add the bell pepper and onion - cook 1 minute
  4. Then add the beans,asparagus and garlic -Cook 1 min
  5. Add the pasta water and herbs and steam about 1 min.
  6. Throw in the pasta and toss real well
