A sweet tropical noodle pudding, which makes an excellent dessert or side dish.
- 24 oz FiberGourmet Light Pasta; can be either Classic or Whole Wheat, or 50/50 split of the two
- 10 eggs
- 1 and 1/2 cups sugar
- 4 tsp. vanilla sugar
- 2 cans (20 oz each) crushed pineapple
- 1/4 cup oil (optional)
- Boil pasta according to package directions. Drain.
- Combine all ingredients and pour into 16x10 greased baking pan
- Bake at 350F for 1 hour.
- Cover baking pan with aluminum foil immediately after removing from oven, to prevent hardening of crust
