Rice and Pasta Pilaf

You could add anything you like to this, but if you use brown rice, it will increase the time to 45 minutes � haven't tried it that way, since I add flax meal to make up the fiber lost in white rice. This turned out really yummy. Be sure to leave about 3-4 TBS liquid in as you reduce, so it won't be dry. It will keep covered for 4 days in fridge and makes about 3-4 servings. Good as a side dish with steak or chicken. You could sub beef broth if you like.

Serves 3-4


  • 1 TBS real butter
  • 3 oz. Fiber Gourmet Spaghetti � broken into small pieces
  • scant 1/2 cup white rice
  • 2 TBS flax meal
  • 4-6 walnuts chopped
  • onion and garlic powder ( or fresh if you prefer)
  • 1/2 tsp ground sage
  • salt and pepper to taste
  • 1 can low sodium chicken broth
  • 1 cup water


  1. Put butter over medium heat in medium pot
  2. Brown the pasta and rice until golden brown
  3. Add rest of ingredients
  4. Cover and cook 20 minutes on low
  5. Uncover and cook on medium high about 5-10 minutes watching carefully, until it is almost dry but still moist.
