Rotini Summer Salad

May need to add more salad dressing before serving, especially if it sits


  • 1 box fiber gourmet rotini
  • 1 pkg Good Seasons Italian Salad Dressing Mix � made according to package directions 1 (15 1/2 oz) can garbanzo beans 1 can medium pitted black olives
  • 1 cup broccoli florets
  • 1 small red pepper diced
  • 1/2 small red onion minced (optional)


  1. Prepare salad dressing and set aside.
  2. Put red pepper and red onion in large serving bowl
  3. Drain and rinse garbanzo beans and add to bowl
  4. Drain olives and cut in half and add to bowl
  5. Chop broccoli florets into small bite size pieces and add to bowl
  6. Add cooked rotini to the bowl and mix all ingredients with enough salad dressing to coat the pasta
  7. Serve it at room temperature or store in the refrigerator for a refreshing cold summer salad
