Salt and Pepper Kugel

A good low-fat carb side for any meal.

Ingredients

  • 1 lb FiberGourmet Light Pasta (Classic)
  • 4 eggs, beaten
  • 2 tbsp water
  • 1 tbsp salt
  • 2 tsp pepper
  • 2 tsp onion powder
  • 2 tsp sugar

Instructions

  1. Boil pasta according to package directions. Drain.
  2. Add all other ingredients to pasta (including 2 tbsp water). Mix well.
  3. Spray 9x13 pan with non-stick cook-spray, or a thin layer of oil.
  4. Bake at 350F for 40-45 minutes. Some people like a crispy top.
