Skinny Sausage and Peppers ala Fiber Gourmet

Serves 6


  • 1 yellow bell pepper sliced
  • 1 green bell pepper sliced
  • 1 red bell pepper sliced
  • 1 onion chopped
  • 1 clove garlic, minced
  • 1 16 oz can basil, garlic diced tomatoes
  • 1 8 oz can chipotle pepper diced tomatoes
  • Chicken or turkey sausage. I used the chicken w/spinach sausage links
  • 1/2 cup red wine


  1. Spray large skillet w/Pam and add a small amount of olive oil
  2. Saut� onion and garlic till just crunchy,
  3. Add peppers and saut� till crunchy, add tomatoes and sausage
  4. Simmer for about 45 minutes.
  5. Serve over Tomato Fiber Gourmet
