Sausage & Shrimp Penne

Serves 3 - either serve 3 or divide into 3 and keep in fridge for other meals during the week for one.

Ingredients

  • 1 - 8 oz box FG penne cooked and drained
  • 1 TBS olive oil
  • 2 Chicken Italian Sausages - cut in rings
  • 1/2 onion-chopped
  • 1 tsp garlic
  • 1/2 tsp salt
  • 1/8 tsp red pepper flakes
  • 1/2 tsp italian herbs
  • 1/2 pound peeled and cut up shrimp
  • 1 box frozen brussels sprouts - boiled and drained
  • 1/4 cup of pasta water
  • Parsley and fresh basil optional
  • Parmesan - about 3 TBS

Instructions

  1. Boil pasta 10-15 minutes and drain- reserve 1 cup liquid
  2. Saute the sausages in the olive oil on high
  3. Add the onion and all herbs
  4. Saute a few more minutes
  5. Add shrimp and cooked brussels sprouts
  6. Simmer covered 1 minute
  7. Pour the drained pasta into the pan with the cooked food
  8. add 1/4 c. pasta water
  9. Toss and simmer just a minute to blend and absorb flavors
  10. Top with parsley and fresh chopped basil
  11. Add a TBS of parmesan to each portion
