🔹2 pt. cherry or grape tomatoes
🔹1/2 shallot or red onion (or both)
🔹3 cloves garlic (optional)
🔹1/2 c. extra virgin olive oil
🔹Crushed red pepper flakes
🔹1 sprig thyme
🔹2 Tbsp Nutritional yeast
🔹1 Tbsp honey
🔹FG linguine pasta
🔹Preheat oven to 400°. In a baking dish, combine tomatoes, shallot, garlic, thyme, basil and olive oil. Season with salt and toss to combine.
🔹Bake for 40 to 45 minutes, until tomatoes are bursting.
🔹Meanwhile, in a large pot of salted boiling water, cook pasta according to package instructions.
🔹In a blender mix tomatoes, honey, nutritional yeast and red peppers.
🔹Stir sauce into pasta until completely combined. Garnish with basil before serving.
