I'm loving this combo and also loving pasta for lunch! Pasta for lunch was not something I used to have, often. Enjoying some hearty chickpea or protein pasta with veggies is such a satisfying combo and hey technically still a salad!
Here’s what you need:
-1/2 cup of pasta (I used @fibergourmet here)
Here’s how to make:
-Boil and prepare pasta
-Slice zucchini and sauce in pan with olive oil
-Chop your cherry tomatoes
-Once pasta cools, add pesto and mix together
-Mix the zucchini and pasta and add in your arugula and tomato & toss!
-I add in some extra protein (leftover chicken or even feta cheese!)
