INGREDIENTS:
- ¼ cup oil
- 2 T lime juice
- 2 T white wine vinegar
- 1 cup parsley
- 1 cup cilantro
- ½ cup chopped white onion
- ¼ cup fresh oregano
- 3 garlic cloves
- 1 Serrano pepper with seeds removed
- 1 t salt
- 1 t lime zest
- 8 oz FG linguine pasta
- 1 package of mushrooms
INSTRUCTIONS:
- Cook pasta according to package directions. Set aside.
- Combine all ingredients except for the mushrooms in a food processor/blender.
- Roast mushrooms in the air fryer for 10 minutes.
- Combine mushrooms, pasta and blended ingredients. Mix well.
