Ingredients
- 1 3/4 cups Fiber Gourmet flour blend
- 2 tsp ground cinnamon
- 1 tsp baking soda
- 1/2 tsp salt
- 1/4 cup avocado oil or melted coconut oil
- 1/4 cup unsweetened applesauce
- 3/4 cup granulated monk fruit sweetener or erythritol blend
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups grated zucchini
- Optional: 1/2 cup walnuts, 1/2 cup chocolate chips
Instructions
- Preheat oven to 350°F and grease or line a loaf pan.
- Whisk together flour, cinnamon, baking soda, and salt.
- In a separate bowl, whisk oil, applesauce, sweetener, eggs, and vanilla.
- Stir in grated zucchini.
- Combine wet and dry ingredients until just mixed. Fold in mix-ins if using!
- Pour into pan and smooth top.
- Bake for 50 to 60 minutes until a toothpick comes out clean.
- Cool before slicing.
