Ingredients
- 1 medium onion
- 1 celery stalk
- 1 small carrot
- 3 tablespoons olive oil
- 1 lb ground beef
- 1 cup red wine
- 1/3 cup tomato paste
- 1 bay leaf
- 1 can peeled tomatoes
- Parmesan and basil
- Fiber Gourmet Light Spaghetti
Instructions
- Finely chop onion, celery, and carrot using a food processor.
- Heat oil in a pot and brown the beef. Remove and set aside.
- Cook the vegetable mixture until soft. Return beef to the pot and add wine. Cook until reduced.
- Stir in tomato paste and cook until slightly darkened. Add tomatoes and bay leaf.
- Simmer on low heat for 2 to 2.5 hours until tender. Remove bay leaf and adjust seasoning.
- Serve overcooked Fiber Gourmet Light Spaghetti and top with Parmesan and basil.
