Ingredients

  • 1 medium onion
  • 1 celery stalk
  • 1 small carrot
  • 3 tablespoons olive oil
  • 1 lb ground beef
  • 1 cup red wine
  • 1/3 cup tomato paste
  • 1 bay leaf
  • 1 can peeled tomatoes
  • Parmesan and basil
  • Fiber Gourmet Light Spaghetti

Instructions

  1. Finely chop onion, celery, and carrot using a food processor.
  2. Heat oil in a pot and brown the beef. Remove and set aside.
  3. Cook the vegetable mixture until soft. Return beef to the pot and add wine. Cook until reduced.
  4. Stir in tomato paste and cook until slightly darkened. Add tomatoes and bay leaf.
  5. Simmer on low heat for 2 to 2.5 hours until tender. Remove bay leaf and adjust seasoning.
  6. Serve overcooked Fiber Gourmet Light Spaghetti and top with Parmesan and basil.
