Ingredients
- 2 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 cup low-fat shredded cheddar cheese
- 1 large egg
- ½ cup skim milk
- ½ cup plain nonfat Greek yogurt
- 1 tablespoon ranch seasoning, divided
- 4 to 5 cups Fiber Gourmet Cheddar Thinables, finely crushed
- 1 tablespoon olive oil or avocado oil spray
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
Optional dipping sauce:
- ½ cup nonfat Greek yogurt
- 1 to 2 tablespoons ranch seasoning or light ranch dressing
- 1 teaspoon lemon juice
Instructions
- Preheat oven to 425°F and line a baking sheet with parchment paper. Lightly spray with oil.
- Crush the Cheddar Thinables into fine crumbs and mix with ½ tablespoon ranch seasoning, salt, and pepper.
- In a bowl, whisk together egg, milk, Greek yogurt, and remaining ½ tablespoon ranch seasoning.
- Season chicken with a pinch of salt and pepper. Dip into the wet mixture, then coat in crumbs. Press shredded cheddar onto each piece.
- Place on the baking sheet and lightly spray with oil.
- Bake for 18 to 22 minutes, flipping halfway through, until internal temperature reaches 165°F.
- Broil for 1 to 2 minutes for extra crispiness if desired.
- Mix dipping sauce ingredients and serve.
