Beet Penne Pasta

Make this delicious Beef Penne Pasta to celebrate Valentine's Day with your loved ones and friends!

 

INGREDIENTS

  • 1 box of FG Light Penne
  • 1 large beet
  • 2 tbsp of Olive Oil
  • 1/4 cup of Cottage Cheese
  • 1/3 cup of Cannellini beans
  • Salt and Pepper (to taste)

 

PREPARATION

  1. Preheat your oven to 425°F. Place the beet in a tin foil and drizzle a little olive oil and salt over it. Close the tin foil, and place it in a ramekin. Roast the beet for 50–60 minutes until the beet is fork-tender.
  2. Cook the Light Penne according to the instructions on the box. Reserve 1/4 cup of pasta water for the sauce, then drain the pasta and set it aside.
  3. Add beets to a high-powered blender or food processor with olive oil, cannellini beans, cottage cheese and salt. Blend until sauce is smooth and creamy. Add reserved pasta water to get desired consistency.
  4. Add the cooked pasta and mix until all the pasta is coated in the sauce. You can add more pasta water here to get your desired consistency.
  5. Top with any optional garnishes and enjoy!
