Beet Penne Pasta

Make this delicious Beef Penne Pasta to celebrate Valentine's Day with your loved ones and friends!
INGREDIENTS
- 1 box of FG Light Penne
- 1 large beet
- 2 tbsp of Olive Oil
- 1/4 cup of Cottage Cheese
- 1/3 cup of Cannellini beans
- Salt and Pepper (to taste)
PREPARATION
- Preheat your oven to 425°F. Place the beet in a tin foil and drizzle a little olive oil and salt over it. Close the tin foil, and place it in a ramekin. Roast the beet for 50–60 minutes until the beet is fork-tender.
- Cook the Light Penne according to the instructions on the box. Reserve 1/4 cup of pasta water for the sauce, then drain the pasta and set it aside.
- Add beets to a high-powered blender or food processor with olive oil, cannellini beans, cottage cheese and salt. Blend until sauce is smooth and creamy. Add reserved pasta water to get desired consistency.
- Add the cooked pasta and mix until all the pasta is coated in the sauce. You can add more pasta water here to get your desired consistency.
- Top with any optional garnishes and enjoy!
