Mushroom Riced Pasta

Ingredients:
- 1 box Fiber Gourmet original riced pasta
- 1 medium yellow onion, sliced
- 1 small butternut squash halved, and seeds removed
- 1 tbsp. olive oil
- About 10 oz mushrooms (we used shiitake, oyster and maitake) whatever you have available will work
- 1 tbsp. butter
- ¼ cup roughly chopped cilantro
- Parmesan cheese for topping
Step 1
Heat up olive oil in a skillet on medium heat. Add the onions, and sauté for 15 minutes or so until they get nice and browned.
Step 2
Clean your mushrooms and slice them or tear them apart. Add them to a skillet on medium heat and cook undisturbed. When they seem cooked add butter and a pinch of salt and pepper. Continue to cook for 5 more minutes until mushrooms are golden brown.
Step 3
Prepare the riced pasta according to instructions.
Step 4
Add all ingredients (riced pasta, mushrooms, caramelized onions and cilantro) to a bowl. Toss together and top with some parmesan cheese. Taste, and season with salt and pepper. Serve warm or at room temperature. Enjoy
