20-Minute Dinner
✔️when cooking for my family, I try to spend less time in the kitchen and more time enjoying the company of my loved ones — this ZUCCHINI PASTA recipe will take you no time, it is loaded with healthy veggies and a high fiber pasta, and it is perfect to have on its own or pair with a protein of choice!
💫ZUCCHINI PASTA RECIPE (makes 3-4 servings):

✔️ Ingredients:
• Rotini pasta (i use the high fiber pasta by @fibergourmet )
• 2 Large Zucchinis, cut into bite sized pieces
• 2-3 Cups of Tomato Sauce .
• 1 Clove of Chopped garlic
• 1 tbs olive oil
• Basil
• Salt, Pepper, and Red Pepper .

✔️Directions: .

(1) Add 3-4 quarts of water to a sauce pan, add 2-3 tbs of salt to the water and allow the water to come to a boil,
.
(2) While the water boils, add the sliced zucchini to a sauté pan with a large pinch of salt, pepper, chopped garlic and olive oil, .
.
(3) Sauté the zucchini on medium heat until the zucchini becomes translucent and golden brown, .
.
(4) When the water starts boiling, add the pasta to the water and cook for 7-10 minutes (follow the instructions on the box of your pasta for cook time to make al dente pasta),
.
(5) Once the pasta has cooked, strain the pasta and add it to the same sauté pan with the zucchini, stir and then add in the red sauce, cook until the sauce is heated,
.
(6) Add the basil to the sauté pan, stir around and then plate the pasta and enjoy!
