Shrimp Marsala Pasta

Ingredients:

  • 2 lb wild-caught shrimp, peeled and de-veined.
  • 1 tbsp light butter
  • 2 shallots, minced
  • 4 garlic cloves, minced
  • 16 oz mushrooms, sliced
  • 2 cups fire roasted crushed tomatoes
  • 1 cup Marsala wine
  • 1 cup low sodium chicken broth
  • 1/4 cup fat free half-and-half
  • 100% olive oil spray
  • Salt, to taste
  • Pepper, to taste
  • FG Light Rotini

 

Preparation:

  1. Pat shrimp dry with a paper towel and season with salt and pepper.
  2. Heat a sprayed large sauce pan over medium-high heat. Add shrimp and cook for 2 to 3 minutes on each side, or until each side is golden brown. Remove from pan and transfer to a plate.
  3. Using the same pan, lower heat to medium. Spray generously with 100% olive oil spray. Add light butter, shallots, garlic and mushroom and cook until tender, about 10 minutes.
  4. Add crushed tomatoes, Marsala wine and chicken broth. Let simmer for 20 minutes.
  5. Add fat free half-and-half, your cooked shrimp and all juice that is on the plate to the pan. Let simmer for 5 to 10 minutes.
  6. (Optional) top it up with grated Parmesan cheese!
