
Shrimp Marsala Pasta

Ingredients:
- 2 lb wild-caught shrimp, peeled and de-veined.
- 1 tbsp light butter
- 2 shallots, minced
- 4 garlic cloves, minced
- 16 oz mushrooms, sliced
- 2 cups fire roasted crushed tomatoes
- 1 cup Marsala wine
- 1 cup low sodium chicken broth
- 1/4 cup fat free half-and-half
- 100% olive oil spray
- Salt, to taste
- Pepper, to taste
- FG Light Rotini
Preparation:
- Pat shrimp dry with a paper towel and season with salt and pepper.
- Heat a sprayed large sauce pan over medium-high heat. Add shrimp and cook for 2 to 3 minutes on each side, or until each side is golden brown. Remove from pan and transfer to a plate.
- Using the same pan, lower heat to medium. Spray generously with 100% olive oil spray. Add light butter, shallots, garlic and mushroom and cook until tender, about 10 minutes.
- Add crushed tomatoes, Marsala wine and chicken broth. Let simmer for 20 minutes.
- Add fat free half-and-half, your cooked shrimp and all juice that is on the plate to the pan. Let simmer for 5 to 10 minutes.
- (Optional) top it up with grated Parmesan cheese!
