Vegan Chimichurri Pasta


  • ¼ cup oil
  • 2 T lime juice 
  • 2 T white wine vinegar 
  • 1 cup parsley
  • 1 cup cilantro
  • ½ cup chopped white onion
  • ¼ cup fresh oregano
  • 3 garlic cloves
  • 1 Serrano pepper with seeds removed
  • 1 t salt
  • 1 t lime zest
  • 8 oz FG pasta 
  • 1 package of mushrooms


  1. Cook pasta according to package directions. Set aside.
  2. Combine all ingredients except for the mushrooms in a food processor/blender. 
  3. Roast mushrooms in the air fryer for 10 minutes.
  4. Combine mushrooms, pasta and blended ingredients. Mix well.
