Healthy Strawberry Shortcake Recipe
Ingredients
Shortcakes
- 1 cup Fiber Gourmet High Fiber Flour Blend
- 1 tbsp granulated sweetener of choice
- 1 tsp baking powder
- pinch of salt
- 3 tbsp cold butter or coconut oil
- ⅓ cup plain Greek yogurt
- 2 tbsp milk of choice
- ½ tsp vanilla extract
Strawberry Filling
- 2 cups fresh strawberries, sliced
- 1 to 2 tsp maple syrup or sweetener of choice
Topping
- whipped cream or Greek yogurt
Instructions
Step 1: Prepare the Dough
Preheat your oven to 375°F and line a baking sheet with parchment paper.
In a medium bowl, whisk together the Fiber Gourmet flour blend, sweetener, baking powder, and salt.
Cut in the cold butter or coconut oil until crumbly. Stir in the Greek yogurt, milk, and vanilla extract until a soft dough forms.
Step 2: Bake the Shortcakes
Divide the dough into 4 shortcakes and place them on the prepared baking sheet.
Bake for 14 to 16 minutes or until lightly golden. Allow them to cool slightly before assembling.
Step 3: Prepare the Strawberries
While the shortcakes bake, toss the sliced strawberries with maple syrup and let them sit for about 10 minutes. This helps create the juicy strawberry filling that makes strawberry shortcake so delicious.
Step 4: Assemble
Slice each shortcake in half and layer with strawberries and whipped cream or Greek yogurt. Add the top half of the shortcake and serve immediately.

Tips for the Best Strawberry Shortcake
Use Cold Butter
Cold butter helps create soft, flaky shortcakes with a tender crumb.
Do Not Overmix
Mix the dough just until combined to keep the shortcakes light and fluffy.
Add Extra Flavor
Lemon zest or vanilla bean paste make delicious additions to the dough.
Make It Higher Protein
For extra protein, use Greek yogurt as the topping or mix vanilla protein powder into the dough.
