  • pinch of salt
  • 3 tbsp cold butter or coconut oil
  • ⅓ cup plain Greek yogurt
  • 2 tbsp milk of choice
  • ½ tsp vanilla extract
Strawberry Filling
  • 2 cups fresh strawberries, sliced
  • 1 to 2 tsp maple syrup or sweetener of choice
Topping
  • whipped cream or Greek yogurt

Instructions

Step 1: Prepare the Dough

Preheat your oven to 375°F and line a baking sheet with parchment paper.

In a medium bowl, whisk together the Fiber Gourmet flour blend, sweetener, baking powder, and salt.

Cut in the cold butter or coconut oil until crumbly. Stir in the Greek yogurt, milk, and vanilla extract until a soft dough forms.
