Ingredients
- 1 box Fiber Gourmet light penne
- 1½ pounds boneless, skinless chicken breast
- 2 cups broccoli florets
- 1 (15 to 16 ounce) jar Alfredo sauce
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- ½ teaspoon sea salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ¼ teaspoon red pepper flakes, optional
- ¼ cup grated Parmesan cheese
- ¼ to ½ cup reserved pasta water
- 1 tablespoon chopped fresh parsley, optional
Instructions
- Cook pasta according to package directions. Add broccoli during last 2 to 3 minutes, then drain together and reserve pasta water.
- Cook seasoned chicken in olive oil until golden and fully cooked. Slice.
- Sauté garlic, then add Alfredo sauce and a splash of pasta water.
- Add pasta, broccoli, and chicken back to pan and toss.
- Stir in Parmesan and adjust sauce with more pasta water if needed.
- Top with parsley and serve.
