Easy Cauliflower Pizza

Ingredients: 

  • Cooking spray
  • 2 bags of frozen Riced Cauliflower (24oz)
  • 2/3 cups Fiber Gourmet flour blend  
  • 1 cup shredded mozzarella cheese
  • 2/3 cup feta cheese 
  • 1/3 cup Parmesan cheese 
  • 1 egg
  • 1 Tbsp oregano 
  • Salt 
  • Tomato sauce of your choice (we used @raoshomemade)
  • Store bought or homemade pesto (optional)

Step 1: Preheat oven to 375°F. Line a large, rimmed baking sheet with parchment paper; coat with cooking spray.


Step 2: Line a large bowl with a linen towel. Pour the thawed cauliflower into the bowl. Gather the towel and squeeze as much water as you out of the cauliflower into the bowl (this is important because it will be soggy if you don’t). 


Step 3: Transfer the strained cauliflower into a clean large bowl, add the egg, flour, 1/3 cup of the mozzarella cheese, 1/3 cup of the feta cheese, oregano, and salt. 


Step 4: Mix thoroughly until combined (you can use your hands!) Mold the mixture into a ball. Place it on the sheet pan and flatten it into a circle using your hands. 


Step 5: Bake for 35 minutes, flip and then bake for another 10 minutes.


Step 6: Add your desired toppings, or follow what we did: Spoon tomato sauce over crust and sprinkle with remaining cheese. If using, add dollops of pesto. Bake until heated through and cheese is melted, garnish with fresh basil. Cut into slices. Enjoy!
