Fudgy Medjool Date Brownies

  • 12 large Medjool dates, pitted and split 
  • 3 large eggs
  • ½ cup granulated sugar
  • 1 stick unsalted butter
  • 1 teaspoon vanilla extract
  • ¼ cup confectioners' sugar
  • ⅓ cup Fiber Gourmet flour blend
  • ⅓ cup cocoa powder
  • 2 teaspoon espresso powder
  • ½ teaspoon fine sea salt
  • ½ cup walnut halves
  • ½ cup bittersweet mini chocolate chips

Step 1

Preheat the oven to 325°F. Line the bottom and sides of an 8 × 8-inch baking pan with parchment paper.

Step 2

Arrange 8 of the dates in a small bowl, cover with boiling water, and soak until the dates soften, 10 minutes. Drain and cool slightly, then transfer the dates to a food processor, add the eggs and granulated sugar, and blend until the dates are pulverized. Add the butter, vanilla, and confectioners' sugar and blend until just combined.

Step 3

Add the flour, cocoa, espresso, and salt and blend until combined, scraping down the sides of the processor.

Step 4

Add the walnuts and pulse until coarsely chopped. Add the chocolate chips and pulse three times to incorporate. Spread the batter into the prepared pan and arrange the remaining date halves on top of the batter.

Step 5

Bake until the top is set but the center is still soft, 30 minutes. Cool completely, then cut and enjoy!
