Cheesy Pesto Rotini

This cheesy Pesto Rotini dish looks just as beautiful as it does delicious!

 

Ingredients:

  • 4 oz FG Light Rotini
  • 1/2 shallot, minced
  • 1 garlic clove, minced
  • 1 tbsp vegan kale cashew pesto
  • 2 tbsp reserved pasta water
  • 1/4 grated Pecorino Romao cheese
  • 100% olive oil spray
  • Salt, to taste
  • Pepper, to taste

 

Preparation:

  1. Cook pasta according to instructions. Reserve 2 tbsp pasta water. Drain and rinse pasta.
  2. Heat a skillet over medium heat and spray with olive oil. Add shallot and cook until translucent, about 2 to 3 minutes. Add garlic and cook for another minute.
  3. Add pasta, pesto, reserved pasta water and Pecorino Romano. Stir until combined. Season with salt and pepper to taste.
  4. Transfer pasta to a bowl and top with cold ricotta cheese.

 

Serves 2. Enjoy!
