
Cheesy Pesto Rotini

This cheesy Pesto Rotini dish looks just as beautiful as it does delicious!
Ingredients:
- 4 oz FG Light Rotini
- 1/2 shallot, minced
- 1 garlic clove, minced
- 1 tbsp vegan kale cashew pesto
- 2 tbsp reserved pasta water
- 1/4 grated Pecorino Romao cheese
- 100% olive oil spray
- Salt, to taste
- Pepper, to taste
Preparation:
- Cook pasta according to instructions. Reserve 2 tbsp pasta water. Drain and rinse pasta.
- Heat a skillet over medium heat and spray with olive oil. Add shallot and cook until translucent, about 2 to 3 minutes. Add garlic and cook for another minute.
- Add pasta, pesto, reserved pasta water and Pecorino Romano. Stir until combined. Season with salt and pepper to taste.
- Transfer pasta to a bowl and top with cold ricotta cheese.
Serves 2. Enjoy!
