Pesto Pasta Salad
. ⭐️ PESTO PASTA SALAD:

✔️Ingredients:
- 1 Box of Rotini pasta (i recommend @fibergourmet or @eatbanza )
- 1/2 Cup of Pesto (i used my homemade pesto, recipe is a few posts back and there is a pesto demo in my story highlights)
- 1/2 Cup of Mini Mozzarella Balls .
- 3 Medium Tomatoes, diced (I remove the liquid from the tomatoes)
- Large Pinch of Salt and Pepper
- Optional: fresh basil

✔️ Directions:

(1) Prepare the PASTA: fill a sauce pan with water, add to the water a LARGE pinch of salt (you want the water to taste like the ocean). When the water comes to a boil, add the pasta and cook for about 7-10 minutes or until the pasta is al dente (read your box for cook time if your unsure). Before you take the pasta out, scoop some of the starchy pasta water into a bowl to add to the pesto later (creates a nice consistency). Then strain the pasta and add it to a large bowl, place the pasta in the fridge to cool down (doesn’t need to be cold, just not piping hot so to not melt the cheese);

(2) While the pasta cools down, in a small bowl add your pesto and add 1/2 Cup of pasta water (or regular water if you didn’t save the pasta water), whisk it together;

(3) When the pasta is room temp, add in your pesto, diced tomatoes, mozzarella and basil if you are using it;

(4) Place the pasta in the fridge so it cools down and enjoy!
